Fiontann Gogarty is managing to do something rather extraordinary: he is converting the Irish people to an appreciation and respect for top-class vinegars, thanks to his range of Wildwood Vinegars.
This is no small feat. The Irish still think of vinegar in the way they used to think of coffee – instant – or beer – Guinness – or bread – Mr Brennans. They view vinegar as a singular thing, just like they still see olive oil, or tea.
