Anthony Creswell has been smoking salmon – and bacon, chicken, duck, and eel – for more than thirty years now, having exited the wine trade to take charge of the West Cork company established by his father. The scale of the company may have grown in tandem with their range of products, but the core approach and attitude of Ummera is unchanged: skillfully apply smoke to excellent foods and let the magic commence. Stated like that, it seems astonishingly simple. But, of course, it is anything but simple to achieve that narcotic halo of smoky richness and ethereality that Mr Creswell brings to his foods, and to be able to achieve that day-after-day takes judgement, skill, experience, patience, and good taste.
