Josef Zammit and Nicola Curran brought his experience as a chef, and her experience as a culinary educator, to Two Cooks, and the couple met with acclaim, and found a hungry local audience, from the day they got the doors open, at Canal View, in Sallins. The dining rooms are as lean and focused as the cooking, and the cooking is a meld of classic country flavours, wedded to modern culinary techniques. Right from the first crunchy, chewy bite of the house sourdough, the kitchen presents an kaleidoscope of tastes and textures in dishes like crispy egg with beef ragu, or lamb sausage with chicory, whilst the signature house fries with Parmesan and truffle, and indeed all the vegetable cookery, drives the point home: make it special. Steak nights mid-week in the wine bar area offer exceptional value, and they feature various art exhibitions.
