Carolanne Rushe’s Sweet Beat café is one of those Irish restaurants that is changing the rules of the game. It’s a plant-based food destination, but the customers who come to eat in this bright and colourful room aren’t necessarily vegans or vegetarians: they are just people who want to enjoy vivid, creative food, irrespective of its plant-based philosophy. And when Sweet Beat serves up their smoky baked beans with avocado and sourdough buttered with their signature rapeseed-coconut-turmeric spread, and takes that dish into the stratosphere, then you understand why omnivores are here, and are tucking in to chick’n burgers and sweet potato fries and black bean tacos and chocolate chip pancakes. Sweet Beat is a real game-changer for the North West.
