Carolanne Rush had a busy year in 2019, running Sligo’s iconic Sweet Beat whilst also getting  the doors open at the funky Sweet As... on Holborn Street, a pinky, pretty diner which offers daytime eating along with a Friday evening dinner club. Whilst the rest of the world argues about meat-based and plant-based diets, Ms Rushe has simply gone right ahead and done what needs to be done: offer delicious cooking, which doesn’t feature meat or dairy. The proof of her success lies in the fact that her customers are ordinary decent folk who just love tasty grub, so they come to Sweet Beat for black bean hotpot, or kale pesto pasta, or kimchi fried rice with toasted peanuts, and for some wickedly fine sweet baking. Ms Rushe isn’t didactic, and neither is her food: Sweet Beat eating is all about enjoyment.
