Very many food lovers will recall Ray Moran as the brilliant chef whose cooking put Harry’s Restaurant, at Bridgend, just outside Derry, on the culinary map a decade ago. After several years working on different projects, Mr Moran is back at the stoves as chef-patron in Soda & Starch, a handsome room in Derry’s pretty craft village, just off Shipquay Street, in the centre of the city. The same finely calibrated, lip-smackin’ cooking that inspired people to drive to Harry’s is back on the menu: seafood cocktail with crab chutney; confit duck with salt-baked celeriac; tagine of lamb rump with salsa verde; smoked shin beef burger. Mr Moran is firing out terrifically tasty grub, and value for money is fantastic.
