Keep it Simple, Sweetheart could be the motto of Niall Sabongi’s Seafood Café. This is how Mr Sabongi plays it: he buys the best oysters, shellfish and seafood that you can buy. With this pristine, sustainable catch to hand, his job is to stand back, and let the ingredients shine. It’s not easy to do this – chefs want to visit both their skills and their personalities on the food – but Mr Sabongi is wise beyond his years. If you have a selection of the best oysters from around the Irish coast, just leave ’em alone. Make a great chowder with cockles and pollock – one of the truly singular chowders. Cook the squid a la plancha. Make a great lobster roll. And make sure to have a food of childhood special on the menu: that fish finger and chip butty will do just fine. Good wines and beers, great friendly staff from all the corners of the world, and one knockout experience.
