Patrick Hanna is the new name in Northern cooking we are all going to be hearing about, so our advice is to get to Root & Branch on the Ormeau Road before the queue out the door stretches all the way down the Lagan Embankment. Mr Hanna started out as a dishwasher before cooking arcs at Noma, Relae, l’entrepot and Riverford Field Kitchen, and he has gifted Ben Craig and Simon Johnston’s coffee roasting operation with some incredible cooking – if you have ever wondered why chefs keep going on and on about kale, just come here and see what Mr Hanna does with it, and you will be forever convinced. The R&B vegetable cookery is a statement of the sublime, whilst dishes such as brunch boxty with home-cured pork belly bacon and horseradish salsa verde are as good as it gets.
