In their charming dining room, Christopher celebrates the local foods – Moyasta oysters; St Tola goat’s cheese; Noel O’Connor’s meats and game; Burren Smokehouse salmon – in elegant dishes: fishcake with seaweed mayonnaise; Burren smoked salmon with crabmeat and tartare cream; rhubarb and vanilla brulee with ice cream sandwich. The suites are large and super-comfortable, with a fully fitted kitchenette in each one. Add specatular sea views and this is a lovely get-away.
