Toby Simmonds and his Real Olive Company changed the landscape of Irish food shopping and eating. Mr Simmonds' dedication to markets, and to ancient market rights, and the battles he waged to protect them for the people of Ireland, have meant that Ireland today has a meshwork of street markets where we can enjoy real choice in shopping for food, rather than the illusion of choice offered by supermarkets. And having achieved all this, Mr Simmonds is as busy as ever bringing his olives and Toons Bridge Dairy cheeses and gorgeous things to eat to markets all over the country. Of course, his stall in Cork’s English Market is the star turn, but anywhere you see those colourful canopies and bulging trestle tables promises a bounty of wonderful foods. In particular, don’t miss the hand-stretched cheeses from the dairy, which are quite unique and brilliantly flavourful.
