Pantry and Corkscrew
Dermott Flynn’s progress as the chef-patron of Westport’s lovely Pantry & Corkscrew has been a sure and steady journey of enquiry, invention, inspiration and discipline. Mr Flynn has shown his discipline in shortening the P&C menus, whilst at the same time drawing inspiration from the superlative suppliers who work round and about him in County Mayo – who else cooks Andarl Farm pork fillet and serves it with a Kelly’s putog pie, or serves local langoustines with a tarragon gnocchi?
Mr Flynn is a questing cook, analysing the potential of his ingredients, and then ushering them to a state of deliciousness with a deft signature style: pork and Gubbeen chorizo burger; goat’s cheese pearls with rhubarb compote; featherblade of beef braised in Mescan stout. Together with his wife, Janice, the Flynns have also fashioned a gorgeously bricolage-style room, creating the perfect setting in which to enjoy this resonant, culturally-rich Irish cooking.
