As soon as we had eaten our first ever Pandora Bell salted caramel, we unwrapped and ate another one. Several minutes later, we ate another, and we want you to know that this is atypical behaviour for us.
But, it’s not everyday that confectionery like Nicole Dunphy’s comes into your life. Astonishingly, Ms Dunphy trained herself as a chocolatier whilst on a career break, before heading to the Valrhona School and then the Italian Culinary Institute. Her caramels and her Tim Burtonish lollipops and her nougats are the stuff of dreams, and not just kid’s dreams, but the dreams of anyone who loves great confectionery made with pure ingredients. “Faking it is just not an option,” says Nicole, and here is a bright new star.
