When Eoin O’Mahony informed his customers that he was making porchetta with pork from Mark Donnelly’s farm on the Model Farm Road, he was careful to point out that “This pork has a natural sweetness as it has been finished on apples.” Now, can you do better than that in the world of charcuterie? Free range pork, finished on apples, which has travelled only a couple of miles into O’Mahony’s Butchers stall in the English Market in Cork. Of course, you can’t do better than that, but this sort of superannuated service is what the O’Mahony family offer to their happy customers. In every way, with every detail, they go the extra mile, their benchmark sourcing congratulated by the frankly sensational butchery skills which the team possess. Their creations mean that O’Mahony’s are the Mozart of meat – sublimely creative, artistic, and utterly unique.
