More than a decade on from his debut in the 100 Best Restaurants, and we can echo today what we wrote then about Gearoid Lynch’s cooking in The Olde Post Inn: “You never have a sense of someone going through the motions... instead you can sense the enquiry and pleasure he finds in creating...” Some of his classic dishes remain on the menus from those early days – bacon and cabbage terrine with baby leek cream; chicken with bacon, potato, apple and herb stuffing; Olde Post smokies – but in the meantime Mr Lynch has kept extending his culinary reach, as well as the scope of the Olde Post, which is a charming place to stay as well as eat. Tara Lynch and her crew manage everything with modest aplomb and capacious efficiency.
