The Olde Post Inn
Gearoid Lynch of the Olde Post has spoken of how he views a visit to eat at his restaurant as offering the chance of “an honest encounter between producer, chef and guest.” In truth, no one brings that blessed trinity of actors into a tighter embrace than this brilliant – and under-rated – chef. He is a great champion of local artisans – most ingredients come from within a five mile radius of the restaurant – and his wife Tara and their team are amongst the most welcoming of people. At the centre of the trinity, then, the chef delivers everything he has learnt over 15 years in Butlersbridge: chicken with whiskey sauce; bacon and cabbage terrine; chicken and lobster with Caesar dressing; cherry clafoutis. Breakfast, incidentally, is just as good as dinner, so stay overnight if you are making the trip to Cavan.
