So when Alan Nolan opened his butcher’s shop at the Corbally Centre in 2015, he had to match the most exacting standards. No sawdust on the floor, no blood stains on the aprons. Instead, the people of Limerick demand meat boutiques, and Mr Nolan stepped up to the challenge. His shop is simply gorgeous, lit like an art gallery, all the better so that customers can focus on the creative excellence of the meats Mr Nolan and his team have prepared. Those preparations show a butcher who has a chef’s instinct, so simple things like sausages, or sausage rolls, or turkey and mozzarella burgers, are created with real culinary instinct and flair. Nolan’s is a new star for Limerick.
