Cashel’s most handsome pub is the place where chef Darren Quinlan also puts the style on the plate, with confident, colourful modern cooking that has that ‘Just what I felt like’ zest.
Mr Quinlan has a real feel for smart gastropub cooking, balancing the expected classics – croque Monsieur; club sandwich; hamburger with Cashel Blue cheese; whole tail scampi with Marie Rose sauce – with his own contemporary riffs on the culinary canon – hops smoked salmon plate; feta, avocado and lentil salad; chicken burger with vinegar slaw. Dinner time lets the cooking show even more brio – Ardsallagh goat’s cheese lollipop with pickled beets; Caesar salad bon bon; lamb rump with heritage carrots; smoked haddock fish croquettes.
It’s just the right food in the right room, and there is no other series of rooms quite as superlatively stylish as these beautiful creations. All told, Mikey Ryan’s is the essential, rock steady Irish gastropub.
