Liam Kirwan has the sort of cheffy c.v. any cook would kill for – everyone from Richard Turner to Tom and Ed Martin, allied to stints in Portugal and New Zealand – and the good news for visitors to Cashel is he has brought all that experience back home to ‘Tipp, and puts it on the plate every day. This fine old pub has enjoyed a stunning, no-expense-spared makeover, so there is comfort and style in which to enjoy some stonking cooking that showcases exemplary Tipperary ingredients: house-smoked salmon with wheaten bread; Killenure Castle charcuterie with rye sourdough; sea trout with bacon and mussel velouté; sourdough pesto with watercress pesto. Every dish is tightly controlled and executed, but Mr Kirwan has fun as well – fish finger sandwich, anyone? Worth the detour.
