Niamh Fox brought a thundering culinary CV to pretty Ennistymon, having worked with Jess Murphy, Margot Henderson, Aoibheann McNamara and Denis Cotter. No surprise, then, that Little Fox opened with a bang, and has continued to surf the wave of success, especially with a series of weekend dinners that show what this singular cook can achieve. Her kitchen is served by a small-holding at her house, and some of the vegetable cookery is stunning: wait till you taste that broccoli, or the Moyhill beets with goats curd, or the sorrel hummus with West Clare lamb kofta. This is the sort of natural, elemental cooking that you could actually eat three times a day – green eggs and ham for breakfast; beef Thai curry for lunch; beetroot and chickpea kofta for dinner.
