Some cooks can make the simplest things taste special, and Niamh Fox is one of those cooks. On a stopover in pretty Ennistymon we walked in to the bare-bones space that is Little Fox and ordered a bowl of tarka dahl with rice and pickled cabbage; a mezze plate of roasted cauliflower, white beans and chilli, carrot and cumin hummus and Hugo’s sourdough; then a slice of lemon drizzle cake, with a cup of coffee from the local Calendar roast house. Everything was simple, everything tasted of itself, and everything was perfect. Ms Fox simply has that touch, and she wisely sources from inspiring local growers and bakers as well as enjoying produce grown by her husband, Sam, on their holding. The result is the purest Banner County cooking that you can eat.
