Killiane Castle is a pure treat, an unpretentious, warm Wexford home, which also just happens to have a medieval castle tower. Paul Mernagh and his family have created a cocoon of comfort in this fine house, and of special note is the scrummy cooking, both at dinner and breakfast: you won’t taste better potatoes and carrots anywhere else, and the cooking offers the pure taste of the county, with a lot of produce coming straight from the garden. In a perfect world, you should plan to stay at Killiane twice: the night before catching the Rosslare ferry, and on the evening of your return, when you have this smashing food to look forward to, and plenty of time to enjoy breakfast the following morning.
