Having spent more than 15 years as head chef at Zuni, Maria Raftery got her own space in the dining zone of the Kilkenny Inn hotel, and quickly set about showing everyone that having her name above the title had fired up her cooking. There are small plates, large plates and platters, and some really funky offers for afternoon tea. But it’s the precision Ms Raftery brings to her signature dishes – trout ceviche with nori; Angus burger with smoked Gubbeen cheese; hake with salsa verde; sizzling chocolate brownie – that makes Kernel cooking amongst the best in the city. Excellent vegetarian choices – aubergine and spinach dahl; cauliflower falafel – give you another reason to walk up the hill, and whilst service still needs some smoothing out, Kernel has really cracked it.
