KCP is the canteen from a better world, a dazzling series of four heterogenous Dublin spaces that mix up funky and healthy foods and hip staff and hungry customers and a unique ambience and a vivid identity, just like other great spaces in Dublin city that define the heartbeat of the capital. Katie Cantwell masterminds KC Peaches, which has grown steadily to four separate destinations in and around the centre of the city, by seeming not to mastermind it. She is one of those cool Seattle-via-San Francisco heads who understands that people need to work with you, not for you, and that confident sense of democracy empowers the staff to be as good as they can be. She also understands that people need to feel that the room they are in is one that they – somehow, mysteriously – actually own. It has to be their room, a place to linger, to make memories. KCP gives you the licence to do that, it gives you the sense that this space is your space, and it gives you the head space to do all that, and you get fed as well.
You get fed extremely well, of course, thanks to superb sourcing of ingredients and an offer that synthesises speed with casualness, yet delivers great, natural food. Ms Cantwell has always been a superb judge of the healthfulness of eating, and she solves any question of health versus deliciousness by cooking everything from scratch, so there are no shortcuts in KCP, just honest food that makes you feel good, served in rooms that make you feel at home. The four KCPs are all different, all have their unique characters, but they all share a warmth and honesty that is as comforting as the cooking.
