Economists like to use the term ‘Portfolio Working’ to describe the efforts of people who do a whole range of things in order to make a living. When it comes to Jinny’s Bakery, and the multi-tasking style of Sinead and Pascal in running a successful artisan industry in County Leitrim, we need a whole new term that stretches way beyond ‘Portfolio Working.’
This dynamic couple do it all: run an acclaimed specialist bakery. Run a tearoom. Run a self-catering business. Supply bread to other retailers. Supply bread mixes to supermarkets. Create oven-ready dinners. And every so often, they scrub up and head off to the capital to pick up another award – the most recent gong they collected was for their exemplary stout soda bread. Phew! ‘Portfolio Working’ simply doesn’t begin to describe their herculean efforts. So, how about ‘Herculean Working’? ‘Panoramic Working’? ‘Infinity Working’?
Whatever term you choose, it will scarcely do justice to the ceaseless commitment and incessant improvement that this duo bring to their baking, their hospitality, and to their fortunate county. Indeed, it’s impossible to understate the service that Jinny’s provides, offering not just breads but also an entire range of meals – parsnip and apple soup; vegetarian lasagne; chicken, ham, leek and mushroom pie; braised red cabbage; pizza doughs; sandwiches to go – all offered from the Tearooms.
This is nothing less than a life-saving service, right across the spectrum, from their superb granola,to the most desirable croissant in the county. Jinny’s is a jewel, in every way imaginable.
