We really admire the fact that they don’t simply follow the fashion of the age when it comes to food, preferring instead to serve the great classic dishes – kidneys Madeira; Kinsale mussels with garlic breadcrumbs; black sole on the bone – that both made, and have sustained, their reputation over the years.
