But Mr Higgins brings an aesthete’s eye and a craftsman’s skill to his calling, and thereby elevates his profession to the level of an art form. It’s not just his shop that is distinguished by being especially handsome. The arrangement and presentation of all the produce is so artfully executed that walking in the door means you step into a gallery of world class charcuterie. Best of all, Mr Higgins loves a challenge, whether that is fashioning his superb Forage & Cure salamis, or ageing an Angus rib-eye for 140 days, or sourcing rare breeds, or smoking brisket with cherry wood. Higgins Family Butchers is simply inspiring.
