County Roscommon is lamb country, and no one understands that better than Mary and Eamonn Gleeson. The serious food lover can do nothing better than to travel to Roscommon town, having booked a room in Gleeson’s Townhouse, then head to the restaurant and order slow-braised Roscommon lamb steak, with a rosemary and redcurrant jus. There, in a single dish, you have the distinct tastes, flavours and food textures of the county. Mind you, you might be faced with a dilemma here, as the Gleeson’s signature dish of Roscommon lamb stew may also be what your heart desires. Now, that’s a rather nice problem, so maybe the only way to solve it is to stay for a few days, explore the surrounds, and head back here to stay another night and enjoy another dinner. The Gleesons have been welcoming guests to their restaurant and rooms since 1991, and they are the pride of the county, backed up at every point by a team of exceptional staff. And do make sure to ask Mary to explain the secret of her wonderful brown soda bread.
