Ms O’Farrell is a fastidious cook: precise, professional, and meticulous. Just look at the artisan ingredients she sources for her creations: Mossfield organic mature cheese for her pizza; fresh mozzarella from Toonsbridge; pork from Crowe’s Farm in Tipperary; Kildinan organic salad leaves. If you imagined that the food coming out of a food truck was simple fare, then it’s time to think again. Galty Valley food is real and creative and dynamic, so join the queue for pulled pork with Toonsbridge scamorza, and free-range bacon with baby roast potatoes and roasted peppers, and Henley’s organic beef burger with chorizo chilli, and homemade felafel with hummus, tzatziki and flat bread. With all this, and with Mary’s own ice cream, you know that it’s no surprise to hear people say that the Galty Valley van serves the best van food they have every enjoyed.
