Martin Shanahan has become public property over the last decade, but celebrity status hasn’t changed the way he thinks about cooking seafood and running a restaurant. Many years ago, he rewired the operation of a coastal seafood restaurant to ensure he was buying the best seafood from boats returning to Kinsale harbour, and getting it straight from the boats into the restaurant. The pristine quality of the fish allows him to keep the cooking simple, which is how it has to be as the restaurant is so phenomenally busy. So, you come here to taste the freshest prawns you have ever eaten, the juiciest megrim, the lobster thermidor with house mash, the crab salad, Jamie’s oysters from Oysterhaven, all of them delivered with bomb-proof efficiency by a great team under the direction of Marie Shanahan.
