They know what they do, and they do it superbly, and they do it day after day: cooking excellent food, and serving it in a clubbable, welcoming room that everyone loves. Best of all, they do all this work quietly, as if it was simple to produce excellent safood cookery every day of the week, and maintain stellar standards.
