Their brilliance lies in the fact that they make what they do in the Fish Box look simple, when in fact it is enormously complex, yet logical and sustainable at the same time. When you learn that Michaél is a qualified engineering and technology teacher, you realise that the nuts and bolts of running a pristine seafood restaurant have all been carefully worked out – sourcing direct from their family trawler; writing menus that play to their strengths; creating a family-style destinatiom which pays tribute to both the Flannery family, and to the hungry families and visitors who come here to enjoy superlative seafood cookery. The Fish Box is pure Kerry genius.
