The art of the hunter is one of the most ancient and profound of the arts, and Jason Conway’s venison company, Elda, allows us access not only to the most superlative wild meat, but also to the skill of the hunter. Mr Conway hunts wild deer, and prepares them with a skill commensurate to his ability as a hunter. He is, therefore, a rare figure in today’s food culture, a man who actually goes off in pursuit of the food we eat, and someone who truly takes his work from the wild, straight to the domestic table. We are often told that the reason we should eat venison is because it is a natural and especially healthy food. But the reason why we should eat Elda venison is simpler: Mr Conway’s meat is utterly, totally delicious, and the various venison products he makes – sausages; burgers – are every bit as good as the loins and haunches he sells.
