Richard Finney has been a Donegal phenom ever since he opened the doors of The Counter, almost a decade ago. But with his New Kid coffee set to debut with national distribution, it’s time for the rest of Ireland to discover one of the most dynamic creators and curators in the artisan food world.
Mind you, we would still recommend a trip to Letterkenny to see all of the things that this dynamic bloke pulls together. The Counter began as a wine shop and deli, before opening a stunning café, where you will find, amongst many joyful things, one of the finest sausage rolls know to man. And everything else they cook here is almost as fine as those sausage rolls.
But tweaking and perfecting the shop and restaurant has led Richard down the path of artisan coffee roasting, and we will bet that this meticulous perfectionist will bring his flair and culinary nous to bear with New Kid.
Right from the early days, Mr Finney was a man to watch. We bet he’s probably only getting started.
