Richard Finney is one of the most dynamic food people in the country, never mind just the county of Donegal, and The Counter is not just a precious Donegal destination, it is a defining Donegal destination, part of the new wave of operators who have set the county’s food culture on fire in recent years. Their posh sausage roll (“Quite possibly the greatest in the world”) is a legend, but then everything here is simply extra good: start the day with frittata with Kemal Scarpello’s stunning sourdough, then explore the Counter staples such as Tuscan bean stew, or the chicken with caramelised onion and Moroccan mayo sandwich. Mr Finney keeps the menus short in order to ensure that everything is good, and everything is, indeed, good, in fact more than good. You will likely find that before you walk out the door that chances are you will disperse a great deal of money in the Deli before you finally leave, but that’s ok, because everything is expertly curated, and you need it.
