Great cooks and hospitality practitioners do one thing above all others: they lavish care on their dishes, and they lavish care on their customers. Maria and Johnnie take us all into their care as soon as we walk in the door of the Connemara Greenway, right in the centre of bustling Oughterard, and the care that distinguishes everything you eat and everything Johnnie and the team do to look after you is utterly delightful. Maria’s secret is the fact that her food is uncommonly precise: she knows exactly what she wants to achieve with each plate, and it makes for eating that is soulful and satisfying: the pristine wild mushroom linguini; perfectly roasted ling with chorizo; a seafood chowder that is worth the trek all the way to Connemara. With such grace and imagination, it comes as no surprise that the Greenway cooking has been picking up important culinary prizes, because the combination of food and service is truly stellar. Best of all, the Greenway is a room where everything is offered with generosity and sincerity, making everyone very happy indeed.
