Chakra by Jaipur
‘Authentically Indian, truly Irish.’ What an elegant and precise way to define the ambitions of Chakra by Jaipur, on the top foor of the Meridian Centre in pretty Greystones, in County Wicklow. Chakra takes the best Irish ingredients and then weaves an altogether Indian wizardry on them, using the subtlety, delicacy and sensuality of Indian spicing and technique to transform these top-class ingredients into something otherwordly. Kilkeel hake is matched with coconut and mangosteen curry; chicken comes scented by rose petals and a sandalwood korma; lamb shank with Himalayan jimbu is such a Chakra classic that it can never be taken off the menu. The care and consistency of the cooking shines through everything that comes from the kitchen, from the excellent vegetarian offers – 24-hour black lentils with fenugreek; paneer with baby aubergines and Hyderabadi peanut tamarnd sauce – to the amazingly skilled naan breads – their classic keema naan is worth the trip to Greystones alone. This is accomplished and authenic food, and the big, bright, colourful room means Chakra is always charming, always authentic, always true.
