Noel McCarron and his crew offer intelligent, flavour-focused, rock-solid cooking in Café Sol, and they have been deservedly rewarded with fully twenty years of success on William Street, in the centre of Ireland's most beautiful city. Mr McCarron knows how to write a menu, so the food served in this pretty room is unpretentious and vivid, edging towards a Med-style sweetness with little savoury bullet-points: Goatsbridge smoked trout salad with dill and caper cream; Irish pork terrine with brioche; chicken tagine with Israeli couscous; Kilkenny sirloin with buttered greens and garlic butter. The vegetarian choices in Sol have always been imaginative – vegetable, pecan and hazelnut roast; vegetable risotto with goat's cheese crouton – and excellent value for money explains why Sol has so many regular customers, and so many visitors, for whom eating here is an integral part of a visit to the most handsome city in the country.
