Ian Orr’s restaurant has been one of the pivotal drivers of culinary excellence in Derry. When it first featured in the 100 Best Restaurants, in 2011, Brown’s was the first restaurant west of the River Bann to make it into the top 100, and Mr Orr’s capacious skills – as both chef and restaurateur – have kept it there ever since. As a chef, he has an inspired felicitousness with his ingredients – king scallops with bacon jam; wood pigeon with barley and blackcurrant; Donegal crab with bloody mary; beef fillet with smoked beef gratin – which means the food is a sheer treat to eat. The excellence of the cooking is matched by the service team, who are as good as it gets, and eating in Browns is the quintessential Derry experience.
