The Bretzel Bakery doesn't just sate your appetite. William Despard's crucial Dublin bakery also satisfies your hunger for precious memories, those deeply imbedded food memories that live forever in our minds, and shape our understanding of, and appreciation for, great food.
The Bretzel created those memories for us when we lived in the city many years ago, cycling up to Lennox Street to get the warm onion rolls for the Sunday breakfast, a time we fondly recall as when the sun always seemed to be shining, and there was plenty of time to take your time.
That's what the Bretzel can do, and that is why it is truly a Dublin institution, on a par with iconic places like The Winding Stair, or Doheny & Nesbitt. It's a superb bakery and café, for sure, but its importance transcends simple baking, for the breads and cakes here are part of the fabric of a life well-lived, a cultured life in the city, and it's no surprise to learn that the Bretzel is a member of the important Real Bread Ireland group, an alliance of the country's best bakers who campaign on behalf of good bread, real bread, the sort of bread that is baked for you in The Bretzel.
William Despard understands this, and respects the unique establishment he manages, an establishment he has steered through important changes, such as the opening of their popular café, which made its debut in late 2014, and which goes from strength to strength. Add in the fact that Bretzel breads are distributed to some of the best food shops throughout the capital, and you understand that the goodness, and the memories, are spreading further and wider.
