The Blind Pig Speakeasy
Paul Lambert is one of Dublin city’s legendary cocktail creators, and The Blind Pig is his first speakeasy venture. The BP started life as a pop-up before settling on this atmospheric, cavern-like basement with its low ceiling and exposed brick walls and high tables. Mr Lambert is a master mixologist, – he has won more trophies for cocktail mastery than you could shake a swizzle stick at – and has no time for fripperies or fshionable drinks, so come here for his own creations and for cocktail classics, like the 50/50 Souzerac, a Green Park, or a Square Ball, their riff on the Highball. For us, starting the evening with one of bartender Oosin Kelly’s Bridge Martinis is the way to go.
The Blind Pig has been such a success that it has already begat a porcine progeny: The Little Pig, a comfy, speakeasy-style bar with New York-style Italian cooking and – most importantly – more of Mr Lambert’s amazing cocktail creations. There is even an absinthe fountain, so we are truly in the land of forbidden dreams. They keep their city centre locations a secret, until you make a reservation, which just adds to the mystery and magic.
