You can tell that this is real, nuanced cooking just by witnessing the energy in the room – the Brasserie is a buzzing place – and when the food arrives, you can see why the punters are so happy. His deli boards are beautifully composed, his organic salmon with sweet potato risotto is right on the money, and the cooking has an earthy, unpretentious tenor: good food cooked smartly and honestly.
