Sligo was the first place we visited when, in 1989, at the helm of a Renault 4 that had cost us £100, we first began to explore Ireland’s food culture. We have kept moving since then, and so has Sligo. The food culture here is more connected and richer now than it has ever been, and it spreads right across the county, from east to west, north to south. There are riches to be discovered and enjoyed, under the shadow of Ben Bulben.
