When Mags and Ger Kirwan launched their Goatsbridge Irish Trout Caviar, Mrs Kirwan explained her modus operandi to Ronan McGreevy of The Irish Times: “Be brave when all around you are fearful”, Mrs Kirwan said, echoing the sagely Warren Buffet, and explaining the seemingly bonkers idea of launching a unique, expensive, trout caviar at a time of unprecedented recession. Is Goatsbridge trout caviar the right product at the right time? There is no doubt about it: Goatsbridge is going to become an iconic Irish artisan food, like Milleens cheese, or O'Hara's stout, or Clonakilty Black Pudding, the food that broke the mould.
