“It is the huge dollop of imagination slathered all over the top that can make his daily specials a treat” says Joe McNamee. Too right, Joe. Simon Mould's pizzas are volcanically tasty, and the fact that Mr Mould can produce such deliciousness out of such a tiny, portable wood-fired oven seems to us to border on the miraculous. His pizzas seem to borrow some cues from Bernadette O'Shea's classic “Pizza Defined” – Cashel Blue with black olives; ginger sausage; black pudding with leeks and pine nuts – but the expert execution and delivery is Mr Mould's very own, and we would walk a country mile – in the rain – for a slice of that classic Margherita and his Gubbeen pepperoni. If you are having a big bash at home, you need Volcano to feed everyone and make them happy.
