Sean Harrigan is a man with a mission. With only five years kitchen experience behind him, he has already made The Sooty Olive, on the Waterside area of Derry, into a very successful, very busy restaurant.
Sean runs a clever, accessible, welcoming destination and his team are enthusiastic and credible. But the thing about The Sooty Olive is that everyone who works here – not least Mr Harrigan himself – knows that they are still learning, still grappling with the ropes and learning the ins-and-outs of the business. Mr Harrigan is apt to take himself off on restaurant tours in order to see how others do what they do, he’s got a patch of land with a polytunnel for veg and herbs, he’s brought in craft beers and a mixologist.
There is real honesty in the cooking – Thai red curry; Greencastle chowder; salt and chilli squid with peanut sauce; hake with tomatoes and peas – and it is easy to see why the restaurant is so popular. And the most exciting thing is that this team are hungry, hungry to learn, hungry to discover, hungry to be their best. One to watch.
