Everything here is done by hand, from the handcrafted work of their brilliant local suppliers to the hands-on care of the kitchen. Sheedy’s does things the old-fashioned way. ‘All dishes are cooked fresh to order’, it says at the foot of their dinner menu, which also describes their dedicated local suppliers, and that cooked-to-order care extends to breakfast, every part of which is cooked individually and served by the team. John and Martina Sheedy have to work hard to do this intensive hands-on hospitality, and it is the happy guest who benefits in this pretty and simple hotel. Simple it may be, but its heart is the very heart of hospitality, the essence of Irish generosity, and simple deliciousness.
