In Organico, both shop and restaurant, Rachel and Hannah Dare have created a pair of spaces where time seems to stand still. If it is still, then what time is it? It’s that time when you were young, felt that life was limitless and full of possibilities, when you knew who you were, and where you wanted to go. Organico is like a portal into your own back pages. It’s rare to be able to achieve this, though there are precedents in everyone’s life: The Winding Stair Bookshop, Dublin, in 1985, for example, would be one of ours.
How do you do it? Sincerity, we think. The portal is fashioned from the desire in the shop and café and from this team of people to do the Good Thing, and to do it modestly, wisely, maturely, and whackily, to do it differently. Organico is one of the great West Cork institutions, a portal to yourself, a gateway to good things.
