To understand the sense of authority and control that Gearoid Lynch brings to his cooking in Cavan’s Olde Post Inn, you need only know this: Lynch cut his teeth working with Kevin Thornton, and also with John Howard, of Dublin’s legendary Le Coq Hardi restaurant. From that formidable pair he learnt judgement, and how to be in control of your kitchen. The flawless food he sends out in his restaurant shows a chef on top of his game, signing every dish with his own confident flourishes: Peking duck with Cointreau sauce; grilled mackerel with dill mayonnaise; turbot with coral sauce; Cavan honey with rice pudding. Being diagnosed with coeliac disease has gifted Mr Lynch with a whole new lease of life, and this guy is relishing every minute in his kitchen.
