Fearghus McCormack and his team are working hard in the Merrion Inn to get beyond the traditional ideas – and the traditional expectations – of what people think Irish pub cooking is, and what Irish pub cooking can be.
They are an ambitious bunch, and Vincent Kelly’s cooking begins with very well-sourced ingredients from blue chip suppliers, so keep an eye on these guys. There is energy and desire at work in The Merrion, and they mix good cooking with a fervent desire to please the customer, and to send you home happy. You will go home happy, and you will be back to The Merrion Inn.
