Lough Boora, like the best organic farms, is a dynamic, mould-breaking venture. Tony Garahy operates one of the most successful box schemes in Ireland, bringing his own and other organic products to a huge network of happy eaters. And he is beloved of restauraturs, who like to feature his deliveries on their menus, none more so than Galway's Kai Café, who create entire plates from whatever has been delivered from Lough Boora.
