If every county in Ireland had a bakery like Jinny’s, supplying the good people of Ireland with spiffing soda breads, superlative scones and stupendous baked goods, then the country would be settled, happy, prosperous and well nourished.
It’s impossible to overstate the importance of bakeries such as Jinny’s. Pascal and Sinead feed the nation not just great breads, but good health, and they do all this at the same time that they are winning awards (loads of them!), having babies, rearing children, attending events, creating jobs, and doing this indefatigably for a dozen dedicated years. And as usual with any deservedly successful enterprise, a rigid backbone of creative excellence is their signature – Jinny’s breads and cakes are first-class, distinctive, and unalloyed delicious. A Jinny’s Bakery in every county, and sure we’d be grand.
