That’s how many tastes Ruairi de Blacam wants on each of his dinner plates each evening, in the other-worldly Inis Meain restaurant, part of the extraordinary concept that is the Inis Meain suites, in Inis Meain island, out in the wild Atlantic sea. Pentland Dells and grilled courgettes. Lobster and wild garlic. Crab and rocket. Gooseberry and loganberry. Rhubarb and goat’s milk. In this gorgeous room, on each succeeding plate,  you taste the elements of the island in the most elemental place imaginable, a place of rock and sea and sky. Serving this pared-back food to the 18 diners each evening allows Mr de Blacam complete control, as he and Marie-Therese orchestrate the evening’s menu to a quiet, defining conclusion. If the food is beautiful and elemental, the suites match them at every stage, framing the landscape of the island, orchestrating the views, inviting a calm contemplation of the exraordinary beauty that is all around you.
