But when Luke and Caroline transformed a fine country bar into a dynamic modern Irish gastropub, back in 2010, they created not just a destination for great food and superb drinks, they also created a monument to the riches of their county. By utilising the produce of many of the best County Mayo artisans, they created a truly special gastropub, a place that defines the county, in the service of great cooking.
