Some people and places punch way above their weight. Luke and Caroline’s gastropub, Flanagan’s, does exactly that. By transforming a traditional country pub into a modern gastropub, by sourcing from Mayo’s finest food producers, and then by offering those ingredients cooked with sympathy and creativity, they have created a special destination, a place to eat and drink that creates the social fabric that binds rural Ireland. It’s impossible to overstate how important the social function of Flanagan’s is to both the local community, and to the wider food community of County Mayo. Luke and Caroline make it look easy, cooking delicious food – chowder with Black Doney brown bread; chicken with Jameson whiskey sauce; beef burger with Mill House farm salad – and organising a team of charming locals who make everyone in Flanagan’s feel special.
