James Cullinan’s cooking relies on classic principles, allied to good sourcing of his ingredients. It’s a template that has served him unshakably, whilst keeping his food up to date in dishes such as sea bream with smoked salmon and spring onion risotto, or marinated Burren lamb with a spring roll filled with confit shank of lamb, and in good puddings like baked caramel cheesecake. Excellent breakfasts will set you up for that promising day ahead.
