
There is a wildness in both Brigitta and Peter Curtin, the sense of a pair who are happy to improvise, happy to see what can be achieved, what can be made with what you have. Mrs Curtin’s Swedish background, her youth on a farm where one “preserved cleverly”, as she says, explains the expertise of their fish smoking: their fish get exactly what they need, and no more.
The aim is to make the most perfect fish product, the thing that speaks of itself, and so discipline lies at the heart of the Burren Smokehouse, but also a sense of fun, and a search for pleasure and the good things. It is one of the great destinations in the West, and one of the great European smokehouses.
